This old, very cold-hardy variety, similar to "Coquille de Louviers" lamb's lettuce, has beautiful, rounded, tender green leaves with excellent flavor.

Sow lightly, directly in the ground, in rows 25 cm apart, tamping lightly and keeping moist. Thin and keep the soil cool. If lamb's lettuce is grown in full sun, shade the rows.

When harvesting, cut the leaves off at the collar to allow second growth.

This ancient variety originated in France. It appears to be the same variety as the one developed by Thomas Jefferson in 1810 under the name "Candia". It was introduced to gardeners in the 17th century, when King Louis XIV's gardener began cultivating it.
