A very old variety of lamb's lettuce whose heart leaves turn yellow under certain conditions. It is more resistant to late-winter bolting than green-leaf varieties.

Sow lightly, directly in the ground, in rows 25 cm apart, tamping lightly and keeping moist. Thin and keep the soil cool. If lamb's lettuce is grown in full sun, shade the rows.
When harvesting, cut the leaves off at the collar to allow second growth.

The first mention of a golden or variegated mâche variety is found in the catalog of grain merchant Auguste Dony, of Antheit (1898). From 1926, it appears in the Gonthier catalog, under the name mâche à cœur jaune ou dorée. From 1956 onwards, its trace is lost before being unearthed again by a family of seed growers from the Huy region.
