This very old variety, poorly adapted to the heat of summer, offers a rosette of rounded pale-green leaves, strongly speckled with burgundy red, with a highly appreciated flavor.

The peripheral leaves are cut off, one by one, as needed. New leaves develop after successive harvests.

Sow in pots or slabs at a temperature of 10-18°C, one month before planting. Cover the seeds with a thin layer of soil, press lightly and water. Once the plants have 4 leaves, prick out. Alternatively, sow lightly, directly into the ground, every 15 days for better staggered harvests, then thin out. This type of sowing produces hardier plants, less susceptible to bolting.

This ancient variety originated with the Mexican Amish people. This type of lettuce has been grown in the United States since the early 17th century. The original variety, according to Domestic Encyclopaedia in 1802, is the result of a cross between the "Brown Dutch" and "Black-Seeded Tennisball" varieties.
