This ancient variety of popcorn, native to the Basque country, produces ears with magnificent dark red to burgundy-red kernels.
Ground, they are used to make taloa, a traditional corn cake.

This variety of peasant corn, which had been grown in the north of the Basque region since the 16th century, had almost disappeared by the end of the 20th century due to the introduction of more productive hybrid varieties. It was rediscovered by Jon Harlouchet in a monastery on the other side of the Pyrenees, in Guipúzcoa, in the southern Basque Country.
