Kohlrabi - Brassica oleracea var. gongylodes - belongs to the Brassica genus and the Brassicaceae family. This large family comprises some 375 genera and 3,200 species. Kohlrabi is mainly eaten raw. Its flavor is reminiscent of radishes, turnips, chestnuts and hazelnuts. It can be eaten raw, grated into salads on its own or with other vegetables. Steamed, it can be served as a side dish. Like turnips, it can be used in stews, soups and gratins. Kohlrabi is rich in fiber, minerals and vitamins, making it an excellent winter vegetable.
