This ancient variety produces banana-shaped fruits weighing from 5 to 30 kg, best eaten before they reach 90 cm in length. Their blue-grey skin, which turns pink when ripe, encloses bright orange flesh, dry and low in sugar, perfect for preserves and purées.

Sow in pots at a temperature of between 18 and 20°C, 2 to 3 weeks before planting. Transplant, with the root ball, into the ground, after the last frosts, at a distance of at least 2 m in all directions. Seeds found on an archaeological site in Peru correspond genetically with the "Banana Squash" currently grown. Banana Squash was introduced to the United States by R.H. Shumway in 1893. The traditional variety had a blue-gray skin with orange stripes, becoming creamy-pink at maturity. Around 1900, the Los Angeles seed company Aggeler et Musser developed three lines: a yellow-orange variety, a blue-gray variety and a pink variety.
