European kale(Brassica oleracea var. sabellica) or Siberian kale(Brassica napus var. pabularia), also known as Kales, belong to the Brassicaceae family - a highly diverse family comprising between 3,000 and 4,000 species and around 375 genera. Kale is a vegetable treasure trove of essential nutrients for human health. They contain very high levels of antioxidants, anti-inflammatories, anti-cancer nutrients and vitamins K, A and C. They also contain iron, copper, manganese, calcium, potassium, vitamin E, B vitamins (B1, B2, B3 and B6), Omega-3s, proteins, etc. The leaves can be baked, steamed, boiled or pan-fried. They also make excellent chips!
